Sausage Quesadilla

A simple alternative to using the normal hotdog roll this is a great tasty favourite.

 

Ingredients

  • Sausage
  • Flour tortillas
  • Sour cream
  • Tomato
  • Cucumber
  • Cheddar Cheese

 

Method

  • Cook your sausages as normal on the BBQ using direct heat with the lid down.
  • Once the sausages are cooked remove from the BBQ.
  • Spread a thin layer of sour cream over one side of the tortilla wrap.
  • Thinly chop the tomato and cucumber and spread evenly over the bottom half of the wrap.
  • Roughly chop the sausage and spread over the bottom half of the wrap.
  • Grate a small amount of cheddar cheese over the top.
  • Fold over the top half of the wrap (make sure the wrap is not to full).
  • Place the folded wrap onto the BBQ either on a griddle plate or baking tray.
  • Cook for 5 minutes until the wrap becomes golden in the colour.
  • Cut in half and serve immediately.

Egg & Bacon Burger

Perhaps not the most healthy burger in the world, but it tastes great.

 

Ingredients

  • 1 Beef burger
  • 1 Rasher of bacon
  • 1 Egg
  • Tomato ketchup
  • Salt
  • Mustard mayo
  • Bread bap

 

Method

  • Mix salt into some tomato ketchup and coat your beef burger with it.
  • Cook the burger using direct heat with the lid closed for around 15 minutes.
  • Cook the bacon on a pre-heated griddle plate until crispy.
  • Break the egg into a bowl and pour carefully onto the griddle plate until fully cooked.
  • Place the burger on the bun and top with the bacon and egg.
  • Add ketchup and enjoy.

Baked Sweet Potato

Super easy to cook, baked sweet potato makes a delicious healthy side dish.  It doesn’t even take up any precious grill space.

Don’t worry about them burning when placed directly on the coals, the foil will protect it.

 

Ingredients

  • 1 Sweet Potato

 

Method

  • Wrap sweet potato in 2 layers of cooking foil.
  • Once the BBQ is at cooking temperature place the wrapped sweet potato directly onto the coals.
  • With the lid on bake for 40-45 minutes.
  • Unwrap and enjoy.

 

Super Simple Nachos

Whilst waiting for the BBQ coals to get to cooking temperature I often make a batch of these nachos for everyone to nibble whilst waiting for the main food to be cooked.

 

Ingredients

  • Bag of Tortilla Chips
  • Jar Salsa Sauce
  • Sour Cream
  • Cheddar Cheese

 

Method

  • Pour the Tortilla chips into the base of an oven proof dish.
  • Drizzle on the salsa and sour cream (be careful not to add too much or the nachos will become soggy).
  • Grate the cheddar cheese over the top.
  • Place on the BBQ over direct heat with the lid on for around 5 minutes until the cheese has nicely melted.
  • Serve immediately.
